Chef Dave’s Pheasant Corn Chowder

Pheasant Steals the Show Again

Kinetic Co-Owner, Dave Dourson, once again got rave reviews for his culinary creations featuring Pheasant at the Aiming for a Cure Foundation’s annual Celebrity Hunt. By popular demand, we’re going to go ahead and share his super secret recipe for Pheasant Corn Chowder. Enjoy!

IngredientsPheasant Corn Chowder

  • 6 tbsp. Butter
  • 4 cups of chicken stock
  • 1 large onion, chopped fine
  • 1 bunch green onions, chopped fine
  • 1 cup celery, chopped fine
  • ¼ cup chopped parsley
  • ¼ cup of minced garlic or fresh
  • 2 cups of diced mushrooms (optional)
  • 4 tbsp. of hot sauce (franks-crystal-red hot)
  • 5 tbsp. flour
  • 1 lb. pheasant (cut thinly-overnight bath of water, 1 tbsp. salt, 1 tbsp. pepper, 2 tbsp. corn starch)
  • 4 cups of fresh or frozen corn (white corn is best)
  • 2 cups of heavy cream or half & half
  • NOTE: you can also add shrimp or substitute chicken in place of pheasant

 

Preparation

  • Place pheasant in large skillet on medium heat and simmer until about 60% cooked (slightly pink) then remove from heat and set aside.
  • Sauté onions, celery, mushrooms and garlic in butter over medium heat until translucent or soft.
  • Whisk in flour, stirring until it’s fully blended in.
  • Add chicken stock and corn until the soup reaches a light boil and begins to thicken.
  • Add parsley, hot sauce, pheasant and green onions and let simmer for 15-20 minutes.
  • Stir in cream and bring to a light boil.
  • Serves about 8.

Congratulatios to Deputy Suzanne Fisher and Kir

Vohne Liche Kennels, a full service K-9 training facility for Police and Military Service Dogs, and Kinetic Performance Dog Food, named Deputy Suzanne Fisher and K-9 Kir of the Washoe County Sheriff’s Office in Reno, Nevada as the winners of the 2016 K-9 of the Year contest.  Deputy Fisher and Kir will be awarded a one year supply of Kinetic Performance Dog Food for the winning photo submission. In addition, Kir’s winning photo will be featured in Kinetic and Vohne Liche media and marketing materials for the remainder of 2016.

Suzanne and K-9 Kir photoDeputy Fisher and Kir were selected as the winners by Vohne Liche owner, Ken Licklider, and a few members of the Vohne Liche Team. “Our program is focused on developing the finest working police and military K-9 teams in the world,” said Licklider. “Deputy Fisher and Kir are a great example of the kind of quality teams we work with each year in training over 400 dogs and 150 handlers from 46 states and 20 foreign countries each year.”

Kir was whelped March 21, 2011 in Lanskroun, Czech Republic and was paired with Deputy Fisher in February of 2013. They were certified as a dual purpose team in March of 2013 before being assigned to the Washoe County Detention Facility and, subsequently, the Washoe County Courthouses. In referencing the photo, Deputy Fisher shared, “My Sergeant, Mike Wright, loves photographing the dogs in action and this was one of Kir’s first pictures being taken with a camera instead of a phone. The camera and the sound it made when taking a picture caught his curiosity.”
